Ingredients

2 ripe mangoes (peeled, pitted, and chopped)

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup granola (your favorite mix)

1/4 cup shredded coconut (optional)

1/2 cup mixed nuts (chopped, optional)

A pinch of salt

Instructions

Prepare the Mango Puree: In a blender, combine the chopped mangoes, Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of salt. Blend until smooth and creamy.

Mix the Dry Ingredients: In a large bowl, combine rolled oats, granola, shredded coconut, and chopped nuts. Mix well to ensure even distribution of ingredients.

Combine Mixtures: Pour the mango yogurt mixture over the dry ingredients. Stir until all the oats are coated with the mango yogurt mixture.

Shape the Rounds: Line a baking sheet with parchment paper. Using a cookie scoop or your hands, form small round discs (about 1.5 inches in diameter) out of the mixture and place them onto the parchment-lined sheet. Flatten them slightly to ensure they freeze evenly.

Freeze the Rounds: Transfer the baking sheet to the freezer and let the mango yogurt cereal rounds freeze for at least 4 hours or until completely solid.

Storage: Once frozen, you can individually wrap the rounds in plastic wrap or place them in an airtight container. They will last for up to one month in the freezer.

Serve and Enjoy: Enjoy these frozen mango yogurt cereal rounds straight from the freezer as a refreshing snack, a delightful breakfast, or a healthy dessert. You can also serve them on top of smoothie bowls or yogurt parfaits for added crunch and flavor.
