Frozen Mango Coconut Cubes

2 ripe mangoes, peeled and diced

1 can (14 oz) coconut milk

1 tablespoon honey or maple syrup (optional)

1 teaspoon vanilla extract

Juice of 1 lime

Pinch of sea salt

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Mangoes: Peel the mangoes and cut them into small cubes. You can also blend them if you prefer a smoother texture in the cubes.

    Mix Ingredients: In a blender, combine the diced mangoes (or mango puree), coconut milk, honey or maple syrup (if using), vanilla extract, lime juice, and sea salt. Blend until smooth and creamy.

      Taste and Adjust: Taste the mixture and adjust sweetness with more honey or syrup if necessary. If the mangoes are super sweet, you might not need any additional sweeteners.

        Fill the Molds: Pour the mixture into silicone ice cube trays or any small molds of your choice, filling them about 3/4 full to allow for expansion during freezing.

          Freeze: Place the filled molds in the freezer for at least 4 hours or until completely frozen.

            Release the Cubes: Once fully frozen, carefully pop the cubes out of the molds. If they are sticking, run a bit of warm water over the outside of the mold to help release them.
