For the Filling:

2 cups fresh or frozen blueberries

2 tablespoons honey (or maple syrup for a vegan option)

Zest of 1 lemon

1 tablespoon lemon juice

1 teaspoon cornstarch

For the Crumble:

1 cup rolled oats

1/2 cup almond flour (or all-purpose flour)

1/4 cup brown sugar (or coconut sugar)

1/4 cup melted coconut oil (or unsalted butter)

1/2 teaspoon cinnamon

1/4 teaspoon salt

Instructions
 

Prepare the Blueberry Filling:

    - In a medium saucepan, combine the blueberries, honey, lemon zest, lemon juice, and cornstarch.

      - Cook over medium heat, stirring occasionally, until the blueberries start to break down and the mixture thickens, about 5-7 minutes.

        - Once thickened, remove from heat and let cool slightly.

          Make the Crumble:

            - In a large bowl, mix together the rolled oats, almond flour, brown sugar, melted coconut oil, cinnamon, and salt.

              - Stir until everything is well combined and crumbly.

                Assemble the Bites:

                  - Line a muffin tin with paper or silicone liners.

                    - Spoon about 1 tablespoon of the crumble mixture into the bottom of each liner.

                      - Add 1 tablespoon of the blueberry filling on top, followed by another tablespoon of the crumble mixture to cover the filling.

                        Freeze the Bites:

                          - Place the muffin tin in the freezer and freeze for at least 2 hours, or until completely solid.

                            Serve:

                              - Once frozen, remove the bites from the muffin tin. You can store them in an airtight container in the freezer for up to a month.

                                - Enjoy directly from the freezer for a refreshing treat!
