In a separate large bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg, vanilla extract, and lemon zest until well combined. Gradually mix in the dry ingredients until just combined. Chill the cookie dough in the refrigerator for about 30 minutes.
