3 large ripe bananas, sliced

1 cup full-fat coconut milk

1/2 cup coconut cream (chilled)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 tsp vanilla extract

1/2 cup unsweetened shredded coconut

1/4 cup chopped walnuts or pecans (optional)

Pinch of salt

1/4 cup dark chocolate chips or cacao nibs for garnish (optional)

Instructions
 

Prepare the Banana Layer: In a blender, combine the sliced bananas, coconut milk, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until smooth and creamy. This will be your banana base.

    Set Up the Pan: Line an 8x8 inch square baking dish or pan with parchment paper, leaving a little overhang on the sides for easy removal later.

      Create the Coconut Layer: In a mixing bowl, whisk together the chilled coconut cream and shredded coconut until well combined. If you want added crunch, fold in the chopped walnuts or pecans.

        Layer the Mixtures: Pour half of the banana mixture into the prepared baking dish, smoothing it out evenly. Next, carefully spread the coconut mixture over the banana layer. Finally, pour the remaining banana mixture on top, spreading it evenly.

          Freeze: Cover the dish with plastic wrap and place it in the freezer for at least 4 hours, or until completely firm.

            Serve: Remove the dish from the freezer and let it sit for about 5 minutes before cutting. Use the overhanging parchment paper to lift the frozen squares out of the dish. Cut into squares.
