2 cups Greek yogurt (plain or vanilla)

1 cup unsweetened apple sauce

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 cup brown sugar (adjust for sweetness)

1 cup diced apples (peeled and cored; Granny Smith or Honeycrisp work well)

1/2 cup crushed graham crackers (plus extra for garnish)

1 tablespoon lemon juice

1 teaspoon vanilla extract

Optional: wooden popsicle sticks or silicone molds

Instructions
 

Prepare the Apples: In a small bowl, toss the diced apples with lemon juice and a sprinkle of cinnamon to prevent browning. Set aside.

    Make the Yogurt Base: In a large mixing bowl, combine the Greek yogurt, apple sauce, ground cinnamon, ground nutmeg, brown sugar, and vanilla extract. Mix until all ingredients are well blended and smooth.

      Add the Apples and Crunch: Gently fold in the diced apples and crushed graham crackers into the yogurt mixture, ensuring they are evenly distributed.

        Fill the Molds: Pour the mixture into your popsicle molds or cups, filling them about 3/4 full to allow for expansion while freezing. If using wooden sticks, place them in the center of each mold.

          Freeze the Pops: Place the molds in the freezer and let them freeze for at least 4-6 hours or until completely solid.

            Unmold and Serve: To release the pops, run warm water over the outside of the molds for a few seconds until they loosen. Carefully pull the pops out of the molds.
