Ingredients

2 ripe bananas

1/2 cup almond butter

1/4 cup dark chocolate chips

1 tablespoon coconut oil

Sea salt (for sprinkling)

Optional toppings: crushed nuts, shredded coconut, or granola

Instructions

Prepare the Bananas: Peel the ripe bananas and slice them into 1/2-inch thick rounds. Set them aside on a parchment-lined baking sheet.

Spread Almond Butter: Use a small spoon to spread a layer of almond butter on top of half of the banana slices. This will create 'sandwiches' once the other slices are added on top.

Assemble the Bites: Place the remaining banana slices on top of the almond butter-coated slices to form mini sandwiches.

Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 20-second intervals, stirring in between, until the mixture is smooth and fully melted.

Dip the Sandwiches: Dip each banana sandwich halfway into the melted chocolate, allowing any excess to drip off.

Add Toppings (Optional): Before the chocolate sets, sprinkle a pinch of sea salt and any desired toppings—like crushed nuts, shredded coconut, or granola—onto the melted chocolate.

Freeze the Bites: Place the chocolate-dipped banana sandwiches back onto the parchment-lined baking sheet and freeze for about 1-2 hours, or until completely solid.

Serve and Enjoy: Once frozen, remove from the freezer and enjoy immediately or store in an airtight container in the freezer for effortless snacking.
