Frosted Blueberry Biscuit Bombs

2 cups all-purpose flour

1 tablespoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1/4 cup granulated sugar

1/4 cup cold unsalted butter, cubed

3/4 cup whole milk

1 cup fresh blueberries (or frozen, thawed)

1 teaspoon vanilla extract

1 cup powdered sugar (for frosting)

2 tablespoons milk (for frosting)

1 teaspoon lemon juice (for frosting)

Zest of 1 lemon (for frosting)

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Dry Ingredients: In a large mixing bowl, sift together the flour, baking powder, baking soda, salt, and granulated sugar.

      Cut in Butter: Add the cubed cold butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

        Combine Wet Ingredients: In a separate bowl, whisk together the milk and vanilla extract. Slowly add this to the dry ingredients, stirring until just combined.

          Fold in Blueberries: Gently fold in the blueberries, being careful not to mash them.

            Form Biscuit Bombs: On a floured surface, turn out the dough and gently knead a couple of times until it holds together. Roll it into a log and cut it into 12 equal pieces. Shape each piece into a ball and place them on the prepared baking sheet.

              Bake: Bake for 15-18 minutes or until the tops are golden brown. Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

                Make the Frosting: In a small bowl, combine the powdered sugar, milk, lemon juice, and lemon zest. Mix until smooth and creamy.

                  Frost the Biscuit Bombs: Once the biscuit bombs are completely cooled, drizzle the frosting over the top of each one.
