Ingredients

1 pre-made pie crust (or homemade if preferred)

4 medium ripe tomatoes, sliced (variety like heirloom for color)

1 cup fresh mozzarella, sliced or torn into pieces

1/4 cup fresh basil leaves, torn

2 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

1 teaspoon garlic powder

Salt and freshly cracked black pepper, to taste

1/4 cup grated Parmesan cheese

1 teaspoon thyme leaves (fresh or dried)

1 egg, beaten (for egg wash)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Crust: If using a homemade pie crust, roll it out and place it into a 9-inch tart pan or pie dish, then crimp the edges. Place in the refrigerator to chill while preparing the filling.

Prepare the Tomatoes: Slice the tomatoes and lay them out on a paper towel for about 10 minutes to absorb excess moisture. This helps to prevent a soggy tart.

Arrange the Base Ingredients: Remove the crust from the refrigerator and sprinkle the grated Parmesan cheese evenly over the bottom.

Layer the Ingredients: Alternate layers of sliced tomatoes and pieces of mozzarella on top of the Parmesan-covered crust. Sprinkle the torn basil leaves over the top.

Season: Drizzle the olive oil and balsamic vinegar evenly over the layers. Sprinkle garlic powder, thyme leaves, salt, and pepper generously over the entire tart.

Egg Wash: Brush the edges of the tart with the beaten egg for a golden finish when baking.

Bake: Place the tart in the preheated oven and bake for 30-35 minutes or until the tomatoes are tender and the cheese is melted and slightly bubbly.

Cool and Serve: Allow the tart to cool for about 10 minutes before slicing. Garnish with additional fresh basil, if desired, and serve warm or at room temperature.
