2 cups fresh corn kernels (about 4 ears of corn)

1 medium red bell pepper, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced

1 cup cherry tomatoes, quartered

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

Salt and pepper, to taste

1 package of mini phyllo pastry cups (15 count)

Avocado slices (for garnish, optional)

Instructions
 

Prepare the Corn: If using fresh corn on the cob, bring a pot of water to a boil. Add the corn and boil for 3-5 minutes until just tender. Remove from water, let cool, and then cut the kernels off the cob.

    Mix the Salsa: In a large mixing bowl, combine the cooked corn kernels, diced red bell pepper, red onion, jalapeño, cherry tomatoes, and chopped cilantro.

      Dress the Salsa: Drizzle the lime juice and olive oil over the salsa mixture. Season with salt and pepper to taste. Toss gently to combine all ingredients evenly.
