1 medium head of cauliflower, cut into florets

1 cup all-purpose flour

1 cup buttermilk (or plant-based milk for a vegan option)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 cup buffalo sauce (adjust to your preferred heat level)

8 small corn or flour tortillas

1 avocado, sliced

1 cup red cabbage, shredded

1/4 cup fresh cilantro, chopped

Lime wedges, for serving

Optional: Vegan ranch dressing for drizzling

Preheat the Oven: Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
