1 cup orzo pasta

1 ½ cups cherry tomatoes, halved

1 cup cucumber, diced

½ red onion, finely chopped

1 cup feta cheese, crumbled

¼ cup Kalamata olives, pitted and halved

¼ cup fresh parsley, chopped

2 tablespoons fresh basil, chopped

3 tablespoons extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Cook the Orzo: Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente, usually around 8-10 minutes. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Vegetables: In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, finely chopped red onion, Kalamata olives, and chopped fresh herbs (parsley and basil).

      Mix the Dressing: In a separate small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, and a pinch of salt and pepper. Adjust seasoning to your taste.

        Combine Everything: Once the orzo has cooled, add it to the bowl with the vegetables. Pour the dressing over the mixture and gently toss to combine all ingredients evenly.
