1 cup canned pumpkin puree (not pumpkin pie filling)

1/2 cup heavy cream

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon fresh sage, chopped (or 1/2 teaspoon dried sage)

1/2 teaspoon nutmeg

Salt and pepper to taste

1/4 cup grated Parmesan cheese (plus extra for serving)

1/4 cup toasted walnuts or pecans (optional, for crunch)

Fresh parsley for garnish (optional)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente (usually 7-10 minutes). Reserve about 1 cup of the pasta water before draining.

    Prepare the Sauce: While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

      Add Pumpkin and Cream: Lower the heat slightly and whisk in the pumpkin puree and heavy cream until smooth. Stir in the fresh sage, nutmeg, and season with salt and pepper. Let the sauce simmer gently for about 3-4 minutes. If the sauce is too thick, add a splash of the reserved pasta water to loosen it up.

        Combine: Add the cooked pasta to the skillet with the pumpkin sauce. Toss gently to coat the pasta evenly. If needed, add more pasta water to reach your desired sauce consistency.

          Finish and Serve: Stir in the grated Parmesan cheese until melted and everything is well combined. Top with toasted walnuts or pecans for added crunch, if using. Garnish with fresh parsley and additional Parmesan before serving.
