Fall Crockpot Veggie Chili

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) diced tomatoes with green chilies

1 can (15 oz) corn, drained

1 large onion, diced

2 cloves garlic, minced

1 bell pepper (red or yellow), chopped

2 medium carrots, diced

1 medium zucchini, chopped

1 medium sweet potato, peeled and cubed

2 cups vegetable broth

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper, to taste

Olive oil, for sautéing

Instructions
 

In a skillet over medium heat, add a drizzle of olive oil. Sauté the diced onion and garlic for about 3-4 minutes, until they turn translucent and fragrant.

    Once the onions are ready, transfer them to the crockpot.

      Add the black beans, kidney beans, diced tomatoes (with their juice), corn, chopped bell pepper, carrots, zucchini, and sweet potato into the crockpot.

        Pour in the vegetable broth and stir until all the ingredients are well combined.

          In a small bowl, mix the chili powder, ground cumin, smoked paprika, cayenne pepper, salt, and pepper together. Sprinkle this spice mix over the ingredients in the crockpot, stirring gently to incorporate all the flavors.

            Set the crockpot to low heat and cook for 6-8 hours, or set it to high heat for 3-4 hours, until the vegetables are tender and the flavors have melded together.

              Taste, and adjust seasoning, adding more salt, pepper, or spices as desired.
