Espresso Glazed Donuts

For the Donuts:

1 ¾ cups all-purpose flour

½ cup granulated sugar

2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

2 large eggs

1/2 cup whole milk

1/4 cup unsalted butter, melted

1 tsp vanilla extract

1/2 cup brewed espresso, cooled

For the Espresso Glaze:

1 cup powdered sugar

2 tbsp brewed espresso

1 tsp vanilla extract

A pinch of salt

Cocoa powder or finely ground coffee (for dusting, optional)

Instructions
 

Preheat your oven to 375°F (190°C). Lightly grease a donut pan or place donut liners inside.

    In a large mixing bowl, sift together the flour, granulated sugar, baking powder, baking soda, and salt.

      In a separate bowl, whisk together the eggs, whole milk, melted butter, vanilla extract, and cooled espresso until combined.

        Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; a few lumps are okay.

          Transfer the batter into a piping bag or a zip-top bag with the corner snipped off. Pipe the batter into the prepared donut pan, filling each cavity about halfway.

            Bake for 10-12 minutes or until the edges are lightly golden and a toothpick inserted into the center comes out clean.

              Remove from the oven, let the donuts cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

                While the donuts are cooling, prepare the espresso glaze. In a medium bowl, whisk together the powdered sugar, brewed espresso, vanilla extract, and a pinch of salt until smooth. Adjust the consistency with more powdered sugar for thickness or a bit more espresso for a thinner glaze.

                  Once the donuts have cooled, dip the tops into the espresso glaze, allowing any excess to drip off. Optional: Dust with cocoa powder or finely ground coffee before the glaze sets.
