Egg-In-A-Hole Breakfast Sandwich

2 slices of thick-cut sourdough bread

2 large eggs

2 slices of sharp cheddar cheese

2 tablespoons unsalted butter

1 avocado, sliced

Fresh spinach leaves (a handful)

Salt and freshly ground black pepper, to taste

Optional: Hot sauce or sriracha for serving

Instructions
 

Prepare the Bread: Using a round cookie cutter or a glass, cut a hole in the center of each slice of sourdough bread, creating a doughnut shape.

    Heat the Pan: In a large skillet, melt 1 tablespoon of butter over medium heat until it starts to bubble.

      Toast the Bread: Place the slices of bread in the skillet and let them toast for about 2-3 minutes until they're golden brown.

        Add Eggs: Carefully crack an egg into the center hole of each slice of bread. Reduce the heat to medium-low and season with salt and pepper.

          Cook the Eggs: Cover the skillet with a lid and cook for about 4-5 minutes, or until the egg whites are set but the yolks remain runny. For firmer yolks, cook an additional minute.

            Melt the Cheese: Lay a slice of cheddar cheese on each egg-topped bread slice. Cover again for another minute until the cheese melts.

              Assemble the Sandwich: Remove the bread from the skillet. On one slice, layer a handful of fresh spinach and avocado slices on top of the cheesy egg. Place the second slice on top to form a sandwich.

                Finish Up: Add the remaining tablespoon of butter to the skillet and toast the outside of the sandwich for 1-2 minutes on each side until golden and crispy.
