Ingredients

2 cans (15 oz each) white beans (such as cannellini or Great Northern), drained and rinsed

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 green bell pepper, diced

1 jalapeño pepper, diced (remove seeds for less heat)

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 can (4 oz) diced green chiles

4 cups vegetable or chicken broth

1 cup corn kernels (fresh, frozen, or canned)

1 lime, juiced

Fresh cilantro, for garnish (optional)

Avocado slices, for serving (optional)

Sour cream or Greek yogurt, for serving (optional)

Instructions

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute, until fragrant.

Add Peppers: Incorporate the green bell pepper and jalapeño into the pot. Sauté for another 5 minutes, allowing the peppers to soften.

Spice It Up: Sprinkle in the ground cumin, smoked paprika, dried oregano, salt, and black pepper. Stir well to coat the vegetables with the spices.

Mix in Beans and Chiles: Add the drained white beans and the diced green chiles to the pot. Mix everything together until well combined.

Add Broth and Corn: Pour in the vegetable or chicken broth and the corn kernels. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover and let it simmer for about 20-30 minutes, stirring occasionally.

Finish with Lime: Once the chili is heated through and flavors are melded, stir in the lime juice for brightness. Taste and adjust seasoning if necessary.

Serve: Ladle the chili into bowls and garnish with fresh cilantro, avocado slices, and a dollop of sour cream or Greek yogurt if desired. Enjoy your cozy meal!
