Easy Tomato Mozzarella Skewers

Ingredients
  

1 pint cherry tomatoes (or grape tomatoes)

8 oz fresh mozzarella balls (bocconcini or ciliegine), drained

Fresh basil leaves (about 15-20 leaves)

2 tablespoons balsamic glaze

2 tablespoons extra virgin olive oil

Salt and freshly cracked black pepper to taste

12-16 small bamboo skewers or toothpicks

Instructions
 

Prep the Ingredients: Rinse the cherry tomatoes under cold water and pat them dry with a clean kitchen towel. Drain the mozzarella balls and set them aside.

    Assemble Skewers: Take a skewer or toothpick and thread a cherry tomato onto it first. Follow with a basil leaf (folded if large), then add a mozzarella ball. Repeat the pattern until the skewer is filled, leaving a little space at each end. Each skewer can hold 2-3 sets, depending on your preference.

      Season: Place the assembled skewers on a serving plate. Drizzle the extra virgin olive oil over the skewers, and then drizzle with balsamic glaze.

        Add Finishing Touches: Sprinkle with a pinch of salt and freshly cracked black pepper for added flavor.

          Serve: These skewers are great served immediately but can also be made a couple of hours in advance and kept in the fridge. Just add the olive oil and balsamic glaze right before serving for the best flavor.
