Easy Potato Bacon Soup Recipe

4 large russet potatoes, peeled and diced

6 slices of thick-cut bacon, chopped

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups chicken or vegetable broth

1 cup heavy cream

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese (optional, for topping)

Fresh chives or green onions, chopped (for garnish)

Cook the Bacon: In a large pot over medium heat, add the chopped bacon. Cook until it becomes crispy, about 6-8 minutes. Remove the bacon pieces with a slotted spoon and set them aside on a paper towel to drain, leaving the bacon drippings in the pot.

    Sauté Vegetables: In the same pot, add the finely chopped onion to the bacon drippings. Sauté for about 5 minutes or until the onion is soft and translucent. Add the minced garlic and sauté for another minute until fragrant.

      Add Potatoes and Broth: Stir in the diced potatoes, smoked paprika, and season with salt and pepper. Pour in the chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 15-20 minutes or until the potatoes are fork-tender.

        Blend the Soup: Remove the pot from the heat. Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, blend just half of the soup and leave the rest as is.

          Stir in Cream: Return the pot to low heat. Stir in the heavy cream and let the soup warm through, about 5 minutes. Adjust seasoning with salt and pepper if needed.

            Serve: Ladle the soup into bowls. Top each serving with the crispy bacon pieces, shredded cheddar cheese (if using), and chopped chives or green onions for garnish. Enjoy your warm, hearty soup!
