Ingredients

4 ripe peaches, peeled and sliced

1 cup fresh raspberries

1/2 cup granulated sugar (divided)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 cup all-purpose flour

1 tablespoon baking powder

1/4 teaspoon salt

1/4 cup unsalted butter, melted

1 cup milk

1 teaspoon almond extract (optional)

Instructions

Preheat the oven: Start by preheating your oven to 375°F (190°C).

Prepare the fruit: In a large bowl, toss together the sliced peaches, raspberries, 1/4 cup of the sugar, lemon juice, vanilla extract, and ground cinnamon. Spread this mixture evenly in the bottom of a lightly greased 9x13 inch baking dish.

Mix the batter: In another bowl, whisk together the flour, baking powder, salt, and remaining 1/4 cup of sugar. In a separate small bowl, mix the melted butter, milk, and almond extract (if using) until combined. Gradually pour the wet mixture into the dry ingredients, stirring until just combined. Do not overmix – a few lumps are okay!

Combine: Pour the batter evenly over the fruit mixture in the baking dish. It’s okay if some of the fruit peeks through – it adds to the charm!

Bake: Place the dish in the preheated oven and bake for about 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Cool and Serve: Allow the cobbler to cool slightly before serving. This dish is delightful warm and can be enjoyed on its own or with a scoop of vanilla ice cream on top!
