Ingredients

4 salmon fillets (about 6 oz each)

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 lemon (zested and juiced)

1 tablespoon honey

1 teaspoon Dijon mustard

Salt and pepper, to taste

2 cups cherry tomatoes, halved

1/4 cup fresh basil, chopped

Lemon wedges, for serving

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Marinade: In a small bowl, whisk together olive oil, minced garlic, red pepper flakes, lemon zest, lemon juice, honey, Dijon mustard, salt, and pepper until well combined.

Marinate the Salmon: Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the salmon, ensuring each fillet is well-coated. Allow to marinate for at least 15-20 minutes (or up to 1 hour for more flavor).

Add Cherry Tomatoes: In a baking dish, arrange the halved cherry tomatoes around the salmon fillets, then pour any leftover marinade over the top.

Bake the Salmon: Bake in the preheated oven for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.

Garnish and Serve: Once cooked, remove from the oven and sprinkle with fresh basil. Serve warm, garnished with lemon wedges on the side.
