Ingredients

1 cup natural peanut butter (creamy or crunchy)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 1/2 cups rolled oats

1 cup dark chocolate chips (preferably dairy-free)

1 tablespoon coconut oil

Optional: sea salt for topping

Instructions

Prepare the Peanut Butter Mixture: In a large mixing bowl, combine the peanut butter, honey (or maple syrup), vanilla extract, and salt. Mix thoroughly until smooth and creamy.

Add the Oats: Gradually fold in the rolled oats to the peanut butter mixture. The mixture should be thick and slightly sticky. Ensure all the oats are well coated.

Shape the Eggs: Using your hands, take about 2 tablespoons of the mixture and shape it into an oval egg shape. Place the formed eggs on a parchment-lined baking sheet. Repeat this process until all the mixture is shaped. You should have around 10-12 eggs.

Chill the Eggs: Place the baking sheet with the formed eggs in the freezer for about 20-30 minutes, or until they are firm and easy to handle.

Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat in the microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.

Dip the Eggs: Remove the chilled peanut butter eggs from the freezer. Dip each egg into the melted chocolate, ensuring it is fully coated. Use a fork to lift it out, allowing excess chocolate to drip off, and then place it back on the parchment-lined baking sheet.

Add the Topping: If desired, sprinkle a pinch of sea salt on top of each chocolate-covered egg before the chocolate hardens.

Chill Again: Place the baking sheet back in the fridge for another 15-20 minutes to allow the chocolate to set completely.

Serve and Enjoy: Once the chocolate has hardened, your Delightful Peanut Butter Eggs are ready to be enjoyed! Store them in an airtight container in the fridge for up to a week.
