Ingredients

1 (30 oz) bag frozen hashbrowns, thawed

1 cup cottage cheese

1 cup sour cream

1 cup shredded cheddar cheese, plus extra for topping

1 small onion, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil (for greasing)

1/4 cup chopped green onions (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with olive oil to prevent sticking.

Prepare the Mixture: In a large mixing bowl, combine the thawed hashbrowns, cottage cheese, sour cream, shredded cheddar cheese, chopped onion, garlic powder, onion powder, paprika, salt, and pepper. Mix everything together until well combined.

Transfer to Baking Dish: Pour the mixture into the greased baking dish, spreading it evenly with a spatula. Make sure to press it down slightly for a compact casserole.

Add Cheese Topping: Sprinkle an additional cup of shredded cheddar cheese on top of the hashbrown mixture to create a delicious, cheesy crust.

Bake: Place the casserole in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and bubbly.

Cool and Garnish: Once baked, remove the casserole from the oven and let it cool for 10 minutes. Garnish with chopped green onions before serving for a fresh flavor boost.

Serve: Cut into squares and enjoy this creamy, cheesy, and comforting casserole warm as a delightful side dish or a hearty breakfast option!
