2 cups cottage cheese (large curd)

6 large eggs

1 cup spinach (fresh, chopped)

1 cup cherry tomatoes (halved)

1/2 cup bell pepper (diced, any color)

1/2 cup onion (diced)

1 cup shredded cheddar cheese

1/4 cup fresh herbs (such as basil or chives, chopped)

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with a little olive oil or cooking spray.

    Sauté the Vegetables: In a skillet over medium heat, add olive oil and sauté the chopped onion and bell pepper until they become soft and translucent (about 5 minutes). Add the chopped spinach and cook for an additional 2-3 minutes until it wilts. Remove from heat and let it cool slightly.

      Mix the Egg Base: In a large mixing bowl, whisk together the eggs, cottage cheese, garlic powder, salt, and black pepper until well combined.

        Combine Ingredients: Stir the sautéed vegetables and halved cherry tomatoes into the egg and cottage cheese mixture. Fold in the fresh herbs and half of the shredded cheddar cheese.
