Easy Chicken & Zucchini Alfredo

2 boneless, skinless chicken breasts, sliced into strips

2 medium zucchinis, spiralized or thinly sliced

8 ounces fettuccine pasta

3 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper, to taste

1 teaspoon Italian seasoning

Fresh parsley, chopped, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Season the sliced chicken with salt, pepper, and Italian seasoning. Add the chicken to the skillet and sauté for about 5-7 minutes, or until cooked through and golden brown. Remove the chicken from the skillet and set aside.

      Cook the Zucchini: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the zucchini and sauté for about 3-4 minutes until slightly tender but still crisp. Season with a pinch of salt and pepper, then remove from heat.

        Prepare the Alfredo Sauce: Lower the heat to medium-low. Pour in the heavy cream and stir in the Parmesan cheese until melted and combined. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.

          Combine Everything: Add the cooked fettuccine, sautéed chicken, and zucchini back into the skillet. Toss everything together gently until the pasta and chicken are fully coated with the Alfredo sauce. Adjust seasoning if necessary.

            Serve: Plate the creamy chicken and zucchini Alfredo, garnishing with chopped fresh parsley. Enjoy your delicious creation!
