1 lb (450g) boneless, skinless chicken breasts, diced

1 cup uncooked long-grain rice

2 cups chicken broth (or water)

1 cup canned corn, drained (or fresh/frozen corn)

1 medium onion, diced

3 cloves garlic, minced

1 cup bell peppers, diced (any color)

1 teaspoon paprika

1 teaspoon cumin

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

2 tablespoons olive oil

½ cup shredded cheddar cheese (optional)

Fresh cilantro or parsley for garnish (optional)

Juice of 1 lime (optional)

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken, seasoning with salt, pepper, paprika, and cumin. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    Cook Vegetables: In the same skillet, add the diced onion and bell peppers. Sauté for about 3-4 minutes until the vegetables are soft. Add the minced garlic and sauté for an additional minute until fragrant.

      Add Rice and Broth: Stir in the uncooked rice and mix well with the vegetables. Pour in the chicken broth and add the corn. Bring the mixture to a boil.

        Simmer: Once boiling, reduce the heat to low and cover the skillet. Let it simmer for 15-20 minutes, or until the rice is tender and has absorbed most of the liquid. If needed, add a bit more broth or water to prevent sticking.

          Combine and Finish: After the rice is cooked, return the cooked chicken to the skillet, mixing everything together. If you’re using cheese, sprinkle it over the top, cover, and let it melt for about 2-3 minutes.
