Easy Chicken and Rice Casserole

2 cups cooked white rice

2 cups shredded rotisserie chicken (or cooked chicken)

1 cup broccoli florets (fresh or frozen)

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 cup breadcrumbs (optional for a crunchy topping)

2 tablespoons olive oil (if using breadcrumbs)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Chicken Mixture: In a large mixing bowl, combine the cooked rice, shredded chicken, broccoli florets, cream of chicken soup, and chicken broth. Stir to combine.

      Season the Mixture: Add garlic powder, onion powder, paprika, salt, and pepper to the chicken mixture. Mix well until all ingredients are evenly distributed.

        Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

          Add Cheese Layer: Sprinkle the shredded cheddar cheese over the top of the chicken and rice mixture.

            Optional Crunchy Topping: In a small bowl, mix the breadcrumbs with olive oil until they are well coated. If using, sprinkle the breadcrumb mixture over the cheese layer for added crunch.

              Bake: Cover the casserole with aluminum foil (to prevent over-browning) and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the topping is golden brown.

                Serve: Let the casserole cool for a few minutes before serving. Scoop portions and enjoy the comforting flavors!
