2 lbs ripe Roma tomatoes, halved

1 medium onion, chopped

4 cloves garlic, minced

3 tablespoons olive oil

Salt and pepper to taste

4 cups vegetable broth (or chicken broth for non-vegetarians)

1 cup fresh basil leaves, loosely packed

1 teaspoon balsamic vinegar (optional)

Fresh basil leaves for garnish

Crème fraîche or heavy cream for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Tomatoes: Place the halved Roma tomatoes on a baking sheet. Drizzle with 2 tablespoons of olive oil, and sprinkle with salt and pepper. Toss to coat the tomatoes evenly.

      Roast the Tomatoes: Roast the tomatoes in the preheated oven for 25-30 minutes until caramelized and slightly charred around the edges. Remove from the oven and set aside.

        Sauté the Aromatics: In a large pot, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

          Combine Ingredients: Add the roasted tomatoes (including any juices), vegetable broth, and balsamic vinegar (if using) to the pot with the onions and garlic. Bring the mixture to a gentle simmer and cook for 10 minutes to allow the flavors to meld.

            Blend the Soup: Remove the pot from heat and add the fresh basil leaves. Using an immersion blender, blend the soup until smooth. (Alternatively, you can carefully transfer the soup in batches to a blender).

              Adjust Seasoning: Taste the soup and adjust the seasoning with more salt, pepper, or balsamic vinegar as desired.

                Serve: Ladle the soup into bowls, garnish with extra fresh basil leaves, and a swirl of crème fraîche or heavy cream if desired.
