1 cup almonds, sliced

1 cup granulated sugar

1/2 cup unsalted butter

1/4 cup water

1 teaspoon vanilla extract

1/2 teaspoon salt

1/2 teaspoon baking soda

1/4 teaspoon ground cinnamon

8 oz dark chocolate, chopped

1/2 cup sea salt for garnish (optional)

Prepare the Baking Sheet: Line a large baking sheet with parchment paper and set aside.

    Make the Praline Mixture: In a medium saucepan, combine granulated sugar, unsalted butter, and water. Heat over medium-high heat, stirring constantly until the mixture comes to a boil.

      Add Pecans and Almonds: Once boiling, add chopped pecans and sliced almonds to the saucepan. Stir continuously for about 5-7 minutes or until the mixture turns a deep golden color and becomes thick.

        Incorporate Flavoring: Remove from heat and quickly stir in vanilla extract, salt, baking soda, and cinnamon. The mixture will bubble up a bit; be careful not to burn yourself!

          Spread the Mixture: Pour the praline mixture onto the prepared baking sheet, spreading it evenly with a spatula. Let it cool completely until hard.

            Melt the Chocolate: While the praline mixture is cooling, melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring after each interval until smooth and fully melted.

              Coat the Praline Crunch: Once the praline is hardened, break it into small pieces. Pour the melted chocolate over the praline pieces in a large mixing bowl and gently toss to coat.

                Set the Chocolate: Return the coated praline pieces to the parchment-lined baking sheet, spreading them out in an even layer. If desired, sprinkle sea salt over the top for an added flavor kick.

                  Final Cooling: Place the tray in the refrigerator for about 30 minutes, or until the chocolate has fully set.
