Ingredients

1 cup medjool dates, pitted and chopped

1/3 cup unsweetened cocoa powder

1/2 cup almond flour

1/4 cup coconut sugar

1/4 cup melted coconut oil

2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped walnuts (optional)

1/2 cup dark chocolate chips

Instructions

Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving some overhang for easy removal later.

In a food processor, blend the chopped dates until they form a smooth paste. If the mixture is too thick, add a tablespoon of warm water to help it combine.

In a large mixing bowl, whisk together the cocoa powder, almond flour, coconut sugar, baking powder, and salt until evenly combined.

In a separate bowl, beat the eggs and mix in the melted coconut oil and vanilla extract. Add the date paste to the egg mixture and stir until well combined.

Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated. Fold in the chopped walnuts and dark chocolate chips, reserving a few chips for topping if desired.

Pour the brownie batter into the prepared baking pan, smoothing the top with a spatula. Sprinkle any reserved chocolate chips on top.

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (but not wet batter).

Remove the brownies from the oven and let them cool in the pan for about 10 minutes. Using the parchment paper overhang, carefully lift them out, and place them on a wire rack to cool completely before slicing.

Enjoy the brownies warm or at room temperature, and savor the chewy texture combined with rich chocolate flavor and natural sweetness from the dates!
