Ingredients

1 cup (200g) dark brown sugar

1/2 cup (100g) granulated sugar

1/2 cup (115g) unsalted butter, softened

1/4 cup (60ml) heavy cream

1 large egg

1 teaspoon vanilla extract

1 3/4 cups (220g) all-purpose flour

1/2 cup (50g) unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon sea salt

1 cup (170g) dark chocolate chips

1/2 cup (120ml) caramel sauce (store-bought or homemade)

Flaky sea salt for sprinkling (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Prepare the Caramel Sauce: If you're using homemade caramel sauce, prepare it first and allow it to cool slightly before using. If using store-bought, ensure it's ready.

Cream the Sugars and Butter: In a large mixing bowl, cream together the dark brown sugar, granulated sugar, and softened butter until light and fluffy. This should take about 3-4 minutes using an electric mixer on medium speed.

Add Egg and Vanilla: Beat in the egg and vanilla extract, mixing until fully incorporated.

Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and sea salt.

Mix Dry Ingredients with Wet: Gradually add the dry mixture to the wet ingredients, mixing until just combined. Do not over-mix.

Fold in Chocolate Chips: Gently fold in the dark chocolate chips, ensuring they are evenly distributed throughout the dough.

Form Cookies: Using a cookie scoop or tablespoon, drop heaping mounds of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.

Create a Caramel Center: Using your thumb or the back of a spoon, make a small indentation in the center of each cookie and fill it with about 1 teaspoon of caramel sauce.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are slightly firm and the centers look set (they will continue to firm up as they cool).

Cool and Sprinkle: Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes. Sprinkle a little flaky sea salt on top of each cookie for an extra flavor burst, then transfer them to a wire rack to cool completely.

Serve and Enjoy: Savor these warm cookies with a glass of milk or your favorite beverage, or store them in an airtight container for up to a week!
