Crunchy Tofu Peanut Lettuce Cups

Ingredients
  

1 block firm tofu, pressed and cubed

3 tablespoons cornstarch

2 tablespoons vegetable oil

1/4 cup unsalted peanuts, chopped

2 green onions, thinly sliced

1 clove garlic, minced

1 tablespoon fresh ginger, minced

1 carrot, grated

1 red bell pepper, diced

1 tablespoon soy sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 head of butter or iceberg lettuce, separated into leaves

Fresh cilantro for garnish (optional)

Lime wedges for serving

Instructions
 

Prep the Tofu: Start by pressing the tofu for about 15-20 minutes to remove excess moisture, then cut it into small cubes.

    Coat the Tofu: In a large bowl, toss the cubed tofu with cornstarch until evenly coated. This will create a nice crunchy texture when fried.

      Cook the Tofu: Heat the vegetable oil in a large pan over medium-high heat. Once hot, add the cornstarch-coated tofu cubes. Fry them for about 5-7 minutes, turning occasionally until golden and crispy on all sides. Remove from the pan and set aside.

        Stir-Fry the Vegetables: In the same pan, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant. Then add the diced red bell pepper and grated carrot. Stir-fry for 2-3 minutes until the vegetables are tender.

          Bring it Together: Lower the heat and return the crispy tofu to the pan. Add the soy sauce, hoisin sauce, rice vinegar, and sesame oil. Toss everything together and cook for another 1-2 minutes until well combined and heated through.

            Prepare Lettuce Cups: Take a lettuce leaf and spoon a generous amount of the tofu mixture into the center. Top with chopped peanuts and sliced green onions.

              Garnish and Serve: Optionally garnish with fresh cilantro. Serve the lettuce cups with lime wedges on the side for an extra burst of flavor.
