1/4 cup peanut butter

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon sriracha (optional, for heat)

6-8 large lettuce leaves (such as butter or romaine) for wraps

Prepare the Slaw: In a large mixing bowl, combine the shredded cabbage, carrots, red pepper, cucumber, cilantro, green onions, and roasted peanuts. Toss them together gently until the veggies are evenly mixed.
