Crunchy Roasted Chickpea Snack

2 cans (15 oz each) of chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/2 teaspoon sea salt

1/4 teaspoon cayenne pepper (adjust based on spice preference)

1 tablespoon nutritional yeast (optional, for a cheesy flavor)

Fresh herbs (such as parsley or rosemary) for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C). This high temperature will help your chickpeas become crispy!

    Prepare the Chickpeas: After draining and rinsing the chickpeas, lay them out on a clean kitchen towel or paper towel. Pat dry thoroughly to remove excess moisture. The drier the chickpeas, the crunchier they will be!

      Mix the Seasoning: In a large mixing bowl, combine olive oil, garlic powder, smoked paprika, ground cumin, sea salt, cayenne pepper, and nutritional yeast (if using). Whisk together until well combined.

        Coat Chickpeas: Add the dried chickpeas to the mixing bowl and toss them well until each chickpea is evenly coated with the seasoning mixture.

          Spread on Baking Sheet: Line a baking sheet with parchment paper for easy cleanup. Spread the seasoned chickpeas in a single layer on the baking sheet.

            Roast the Chickpeas: Bake in the preheated oven for 25-30 minutes, shaking the baking sheet halfway through to ensure even roasting. Roast until they are golden brown and crispy.

              Cool and Serve: Once done, remove the baking sheet from the oven and let the chickpeas cool for a few minutes. They will continue to crisp up as they cool. Optionally, garnish with freshly chopped herbs for added flavor and freshness.
