1 medium head of cauliflower, cut into bite-sized florets

1 cup buttermilk (or dairy-free alternative)

1 cup all-purpose flour (or almond flour for a gluten-free option)

1 cup panko breadcrumbs (or crushed cornflakes for extra crunch)

2 teaspoons ranch seasoning mix (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Olive oil spray (or any preferred cooking oil)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone mat for easy cleanup.

    Prepare Cauliflower: In a large bowl, add the cauliflower florets and pour in the buttermilk. Let them soak for about 15 minutes for added flavor and moisture.

      Create Breadcrumb Mixture: In a separate bowl, combine the flour, ranch seasoning mix, garlic powder, onion powder, paprika, salt, and pepper. Mix well to combine all the dry ingredients.

        Coat Cauliflower Bites: After soaking, remove the cauliflower from the buttermilk. Allow any excess liquid to drip off before dipping each floret into the flour mixture, ensuring it's thoroughly coated. Shake off excess flour.

          Breadcrumb Coating: Dip the coated cauliflower into the panko breadcrumbs, pressing lightly to make sure the crumbs stick to each piece.

            Arrange on Baking Sheet: Place the coated cauliflower bites on the prepared baking sheet in a single layer. Make sure there’s space between each piece for optimal crunch.

              Spray with Oil: Lightly spray the tops of the cauliflower bites with olive oil to help them crisp up.

                Bake: Bake in the preheated oven for about 20-25 minutes, or until the bites are golden brown and crispy. Turn halfway through baking to ensure even crispiness.
