2 large cucumbers

1 cup sushi rice

2 cups water

1 tablespoon rice vinegar

1 teaspoon sugar

1/2 teaspoon salt

1/2 cup cooked crab meat (or tofu for a vegetarian option)

1/4 cup diced avocado

1/4 cup julienned carrots

1/4 cup thinly sliced bell peppers (red or yellow)

Soy sauce, for dipping

Wasabi, to taste

Sesame seeds, for garnish

Nori sheets (optional, for extra flavor)

Instructions
 

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a pot. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the water is absorbed. Remove from heat and let it sit for 10 minutes.

    Season the Rice: In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spoon. Allow the rice to cool completely.

      Cucumber Preparation: Cut the cucumbers in half lengthwise and scoop out the seeds using a small spoon, creating a hollow boat. You can also peel them if you prefer.

        Fill the Cucumber Boats: Once the sushi rice has cooled, take a small amount and press it firmly into one of the cucumber halves. Top with a layer of crab meat, followed by diced avocado, julienned carrots, and sliced bell peppers (and a small strip of nori if using). Press down gently to secure the toppings in place.

          Repeat: Continue this process with the remaining cucumber halves until you run out of ingredients.

            Presentation: Cut each cucumber sushi bite into 2-3 pieces, placing them upright on a serving platter. Drizzle with soy sauce and sprinkle sesame seeds on top for a burst of flavor.
