Crunchy Carrot Cucumber Spring Rolls

8 rice paper sheets

1 medium carrot, julienned

1 medium cucumber, julienned

1 bell pepper (red or yellow), thinly sliced

1 avocado, sliced

1 cup fresh mint leaves

1 cup fresh cilantro leaves

½ cup vermicelli noodles, cooked according to package instructions

¼ cup soy sauce or tamari (for dipping)

1 tablespoon sesame oil

Optional: crushed peanuts for garnish

Prep the Vegetables: Start by washing all the vegetables. Julienne the carrot and cucumber, and thinly slice the bell pepper. Slice the avocado and set everything aside.

    Soften the Rice Paper: Fill a shallow dish or large plate with warm water. Dip one rice paper sheet into the water for about 10-15 seconds or until it softens. Be careful not to let it soak too long, or it will become too fragile.

      Assemble the Spring Rolls: Place the softened rice paper on a clean, flat surface. In the center of the sheet, layer a small amount of each vegetable (carrot, cucumber, bell pepper, and avocado), followed by a few mint leaves, cilantro leaves, and a small handful of vermicelli noodles.

        Wrap it Up: Fold the bottom of the rice paper up over the filling, then fold in each side, and finally roll it tightly from the bottom to the top, like a burrito. Repeat this process for the remaining rice paper sheets and filling, while keeping the assembled rolls covered with a damp cloth to prevent them from drying out.

          Prepare the Dipping Sauce: In a small bowl, mix the soy sauce or tamari with sesame oil. This will serve as a savory dipping sauce for your spring rolls.

            Serve and Enjoy: Arrange the finished spring rolls on a platter. If desired, sprinkle with crushed peanuts for an added crunch. Serve with the dipping sauce on the side.
