2 ripe avocados

1 cup cornflakes, crushed

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

1/2 teaspoon black pepper

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup diced red onion

1 cup shredded cheese (cheddar or a Mexican blend)

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Avocados: Cut the avocados in half and remove the pit. Carefully scoop out the avocado flesh, leaving a thin layer attached to the skin to maintain the shape. Dice the scooped-out flesh.

      Coat the Avocado Halves: In a shallow bowl, mix the flour, garlic powder, paprika, cayenne pepper, salt, and black pepper. In another bowl, place the beaten eggs, and in a third bowl, add the crushed cornflakes.

        - Dip each avocado half into the flour mixture, coating well.

          - Next, dip them into the beaten eggs before rolling them in the crushed cornflakes to ensure a good crunch.
