Crunchy Avocado Spring Rolls

6 rice paper wrappers

1 ripe avocado, sliced

1 cup cucumber, julienned

1 cup carrot, julienned

1 cup red bell pepper, thinly sliced

1 cup fresh mint leaves

1 cup fresh cilantro leaves

1 cup cooked shrimp or tofu (optional for protein)

½ cup panko breadcrumbs (for crunch)

2 tablespoons sesame oil (for frying)

Dipping sauce (soy sauce, peanut sauce, or sweet chili sauce)

Instructions
 

Prepare the Vegetables: Start by washing and preparing your veggies. Slice the avocado, julienne the cucumber and carrots, and thinly slice the red bell pepper. Set aside.

    Soak Rice Paper: In a shallow dish, fill it with warm water. Soak a rice paper wrapper for about 10-15 seconds until it is soft but not too mushy. Lay it flat on a clean cutting board.

      Fill the Wrapper: In a horizontal line across the middle of the rice paper, layer a few slices of avocado, along with a handful of cucumber, carrots, bell pepper, mint, cilantro, and shrimp or tofu (if using).

        Roll It Up: Fold the sides of the rice paper inward, then roll it away from you tightly, ensuring the filling stays in. Repeat the process for the remaining wrappers.

          Coat with Panko: Once all the rolls are wrapped, roll each spring roll in panko breadcrumbs, pressing lightly to ensure they stick.

            Fry the Rolls: Heat the sesame oil in a skillet over medium heat. Add the spring rolls in batches and fry until golden brown and crispy on all sides, about 2-3 minutes. Remove and drain on paper towels.

              Serve: Arrange the crunchy avocado spring rolls on a serving plate and serve hot with your choice of dipping sauce.
