Ingredients

1 pound boneless, skinless chicken breasts

2 cups cooked white beans (cannellini or great northern)

1 medium onion, chopped

2 cloves garlic, minced

1 green bell pepper, diced

1 can (4 oz) diced green chilies

1 can (14 oz) low-sodium chicken broth

1 cup frozen corn

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup heavy cream or coconut milk (for a dairy-free version)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Chicken: Start by placing the boneless, skinless chicken breasts at the bottom of the crockpot.

Chop the Vegetables: Add the chopped onion, minced garlic, and diced green bell pepper on top of the chicken.

Add Beans & Chilies: Gently fold in the cooked white beans and the can of diced green chilies.

Pour in Broth: Add the chicken broth, ensuring that all ingredients are submerged under the liquid.

Season Up: Sprinkle the cumin, chili powder, smoked paprika, salt, and pepper over the ingredients for seasoning.

Top with Corn: Toss in the frozen corn last—this will help retain some texture to the corn.

Cook It Low & Slow: Cover the crockpot and cook on low for about 6-7 hours, or on high for 3-4 hours, until the chicken is thoroughly cooked and tender.

Shred the Chicken: About 30 minutes before serving, carefully remove the chicken breasts, shred them using two forks, and return the shredded chicken to the chili.

Add Creaminess: Stir in the heavy cream or coconut milk to give the chili a creamy texture. Let it warm through for at least 10 minutes.

Garnish & Serve: Ladle the chili into bowls, garnish with fresh cilantro, and serve with lime wedges on the side for an added zing!
