1 pound lean ground turkey

1 can (14 ounces) diced tomatoes with green chilies

1 can (15 ounces) kidney beans, drained and rinsed

1 can (15 ounces) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

2 cups low-sodium chicken broth

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon dried oregano

½ teaspoon salt (or to taste)

¼ teaspoon black pepper

8 ounces pasta (shells or elbows)

Optional toppings: shredded cheese, sour cream, cilantro, avocado, or diced green onions

Instructions
 

Brown the Turkey: In a skillet over medium heat, brown the ground turkey until fully cooked, breaking it apart with a spoon (about 5-7 minutes). Drain any excess fat and transfer the turkey to your crockpot.

    Add Vegetables: To the crockpot with turkey, add the diced tomatoes (with juices), kidney beans, black beans, corn, onion, garlic, and bell pepper. Stir to combine.
