Ingredients

1 lb spaghetti

1 lb ground beef or turkey

1 can (28 oz) crushed tomatoes

2 cups chicken or vegetable broth

1 large onion, diced

3-4 Hatch peppers, roasted, peeled, and chopped (seeds removed for less heat)

3 cloves garlic, minced

1 tbsp olive oil

2 tsp dried oregano

1 tsp dried basil

1 tsp salt

½ tsp black pepper

½ tsp red pepper flakes (optional, for extra spice)

1 cup shredded mozzarella cheese (for serving)

Fresh basil leaves, for garnish

Instructions

Prep the Hatch Peppers: If using fresh Hatch peppers, roast them over an open flame or under a broiler until their skins are charred. Place them in a bowl and cover with plastic wrap for about 10 minutes. Once cool, peel off the charred skins, remove the seeds, and chop the peppers.

Sauté the Aromatics: In a skillet over medium heat, add olive oil. Once hot, add diced onions and sauté until translucent (about 5 minutes). Add minced garlic and sauté for an additional 1 minute, until fragrant.

Brown the Meat: Add ground beef or turkey to the skillet. Cook until browned and fully cooked through, breaking it apart with a spatula as it cooks. Drain any excess fat if necessary.

Combine Ingredients: In a large crockpot, combine the sautéed meat mixture, crushed tomatoes, chicken or vegetable broth, chopped Hatch peppers, oregano, basil, salt, black pepper, and red pepper flakes (if using). Stir to combine.

Cook the Spaghetti: Break the spaghetti noodles in half and add them to the crockpot, ensuring they are submerged in the sauce. Gently stir everything together to combine.

Crockpot Cooking: Cover the crockpot with the lid and set it to cook on low for 4-6 hours, or on high for 2-3 hours. Stir occasionally, if possible, to prevent noodles from sticking.

Serve: Once the spaghetti is cooked and the sauce is thickened, serve hot in bowls. Top each serving with a generous sprinkle of shredded mozzarella cheese and fresh basil leaves for garnish.

Enjoy: Dig in and relish the creamy, spicy, and savory flavors of your Slow-Cooked Spaghetti with Hatch Peppers!
