Ingredients

4 boneless, skinless chicken breasts

2 large yellow onions, thinly sliced

4 cloves garlic, minced

1 cup beef broth

1 cup dry white wine (or additional broth for non-alcoholic)

2 tablespoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

1 tablespoon olive oil

1 cup shredded Gruyère cheese (or Swiss cheese)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the onions: In a skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are softened and caramelized, about 15-20 minutes. Add the minced garlic during the last 3-4 minutes of cooking.

Layer in the crockpot: Place the chicken breasts in the bottom of a 6-quart slow cooker. Season them with salt, pepper, thyme, and rosemary. Pour the Worcestershire sauce over the chicken.

Combine liquids: In a bowl, mix the beef broth and white wine (or additional broth). Pour this mixture over the seasoned chicken, ensuring the chicken is well-covered.

Add the onions: Gently layer the caramelized onions and garlic over the chicken in the crockpot, ensuring an even distribution.

Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.

Cheese topping: About 10 minutes before serving, sprinkle the shredded Gruyère cheese over the cooked chicken. Cover the crockpot again to allow the cheese to melt.

Serve: Once the cheese is melted and bubbly, carefully plate the chicken with a generous ladle of broth and onions from the crockpot. Garnish with freshly chopped parsley.

Enjoy: Serve with crusty bread or over a bed of mashed potatoes or rice to savor the rich, savory flavors.
