Crockpot Creamy Spinach Artichoke Chicken

4 boneless, skinless chicken breasts

1 can (14 oz) artichoke hearts, drained and roughly chopped

1 cup fresh spinach, chopped (or 1 cup frozen, thawed and drained)

1 cup cream cheese, softened

1 cup sour cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken breasts with salt, pepper, and onion powder. Place them in the bottom of the crockpot.

    Mix the Sauce: In a mixing bowl, combine the softened cream cheese, sour cream, artichoke hearts, spinach, grated Parmesan cheese, minced garlic, and Italian seasoning. Stir until well combined.

      Combine in the Crockpot: Pour the creamy mixture over the chicken breasts in the crockpot, ensuring they are well coated.

        Cook: Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.

          Add Mozzarella: About 30 minutes before serving, sprinkle the shredded mozzarella cheese over the chicken and sauce in the crockpot. Cover to let the cheese melt.
