Ingredients

2 cups cooked and shredded chicken (rotisserie works great)

1 (8 oz) package of cream cheese, softened

1 cup sour cream

1 cup salsa (mild, medium, or hot depending on your preference)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 (1 oz) packet taco seasoning

1 can (4 oz) diced green chilies (optional)

½ teaspoon garlic powder

½ teaspoon onion powder

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions

Prep the base: In a large mixing bowl, combine the softened cream cheese, sour cream, and salsa. Stir until smooth and well-combined.

Add the chicken: Fold in the shredded chicken, taco seasoning, garlic powder, onion powder, and diced green chilies (if using).

Layer the cheese: Add half of the shredded cheddar and Monterey Jack cheeses to the mixture, ensuring it's evenly distributed.

Crockpot setup: Transfer the mixture into your crockpot. Sprinkle the remaining cheeses on top for a melty finish.

Cook: Cover and cook on low for 2 to 3 hours, or until everything is heated through and the cheeses are melted to your desired consistency. Stir occasionally to ensure even melting.

Garnish and serve: Once the dip is ready, remove the lid and give it a gentle stir. Top with fresh chopped cilantro as a garnish. Serve warm with tortilla chips for dipping.
