Crock Pot Beef Tips and Gravy

2 pounds beef sirloin tips, cut into bite-sized pieces

1 cup onion, finely chopped

4 cloves garlic, minced

2 cups beef broth

1 cup mushroom, sliced (optional)

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 tablespoon olive oil

2 teaspoons dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 tablespoons cornstarch (for thickening)

3 tablespoons water (for cornstarch slurry)

Fresh parsley, chopped (for garnish)

Sear the Beef: In a skillet over medium-high heat, add olive oil. Once hot, add the beef tips in batches, searing until browned on all sides. Transfer the beef to the crock pot.

    Sauté the Aromatics: Using the same skillet, add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent. Transfer the mixture to the crock pot with the beef.

      Build the Flavor: Add the sliced mushrooms, beef broth, Worcestershire sauce, soy sauce, thyme, rosemary, salt, and pepper to the crock pot. Stir everything gently to combine.

        Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.

          Thicken the Gravy: About 30 minutes before serving, mix cornstarch and water in a small bowl to create a slurry. Stir the slurry into the crock pot and cover. Let it cook on high for another 30 minutes to thicken the gravy.

            Serve: Taste and adjust the seasoning if necessary. Serve the beef tips over mashed potatoes, rice, or egg noodles, garnished with chopped parsley.
