Ingredients

2 lbs boneless, skinless chicken breasts or thighs

1 cup barbecue sauce (your favorite brand)

1/2 cup chicken broth (low sodium)

1/4 cup apple cider vinegar

2 tablespoons brown sugar

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1 tablespoon olive oil (optional, for searing)

4 burger buns or sandwich rolls

Coleslaw (for topping, optional)

Instructions

Prep the Chicken: Start by patting the chicken dry with paper towels and seasoning generously with salt and pepper on both sides.

Optional Searing: In a skillet over medium-high heat, add olive oil. When hot, sear the chicken for 2-3 minutes on each side until golden brown for extra flavor. This step is optional but enhances the overall taste.

Combine Ingredients: In your crock pot, whisk together the barbecue sauce, chicken broth, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, and cayenne pepper. Mix until well combined.

Add Chicken: Place the seared (or raw) chicken into the crock pot, ensuring it is well-coated with the sauce mixture.

Cook: Cover the crock pot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.

Shred the Chicken: Once cooked, carefully remove the chicken breasts from the crock pot and place them on a cutting board. Use two forks to shred the chicken; it should fall apart easily.

Mix with Sauce: Return the shredded chicken to the crock pot and stir it into the remaining sauce, mixing well to ensure every piece is coated.

Serve: Spoon the pulled chicken onto burger buns or rolls and top with coleslaw if desired. Serve warm, and enjoy your delicious BBQ Bliss Pulled Chicken!
