Crispy Zucchini Fritters

2 cups grated zucchini (about 2 medium zucchinis)

1 teaspoon salt

1/2 cup all-purpose flour

1/4 cup cornmeal

1/2 teaspoon baking powder

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 cup grated Parmesan cheese (optional)

1 large egg, beaten

2 tablespoons fresh parsley, chopped (or 1 teaspoon dried parsley)

Freshly cracked black pepper, to taste

Olive oil, for frying

Instructions
 

Start by grating the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out as much excess moisture as possible. This step is crucial for achieving crispy fritters.

    In a large bowl, combine the drained zucchini with the salt. Let it sit for about 10 minutes to draw out more water. After 10 minutes, squeeze it again to ensure it’s dry.

      In another bowl, whisk together the flour, cornmeal, baking powder, garlic powder, onion powder, and a pinch of black pepper.

        Add the beaten egg, grated Parmesan cheese (if using), and chopped parsley to the dry ingredients. Fold in the squeezed zucchini and mix until everything is combined evenly. The mixture should hold together; if it’s too wet, add a little more flour.

          Heat a non-stick skillet over medium heat and add enough olive oil to coat the bottom (about 2-3 tablespoons). Once the oil is hot, drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly with the back of the spoon to form patties.

            Cook the fritters for about 3-4 minutes on each side or until they are golden brown and crispy. Avoid overcrowding the pan; cook in batches if necessary.

              Transfer the cooked fritters onto a paper towel-lined plate to drain excess oil.

                Serve warm, garnished with additional chopped parsley or a dollop of sour cream or yogurt for dipping. Enjoy your crispy zucchini fritters!
