Crispy Tofu Teriyaki Nuggets

14 oz (400g) firm tofu, pressed and drained

1 cup cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper, to taste

Oil for frying (vegetable or canola oil)

Teriyaki Sauce:

¼ cup soy sauce (or tamari for gluten-free)

2 tablespoons brown sugar

1 tablespoon rice vinegar

1 tablespoon mirin (sweet rice wine)

1 teaspoon sesame oil

1 teaspoon grated fresh ginger

1 teaspoon minced garlic

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)

Instructions
 

Prepare the Tofu: Cut the pressed tofu into bite-sized nuggets, about 1-inch cubes. This ensures they cook evenly and are easy to eat.

    Coat the Tofu: In a large bowl, mix the cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss the tofu nuggets in the cornstarch mix until fully coated. Set aside on a baking sheet.

      Make the Teriyaki Sauce: In a small saucepan, combine soy sauce, brown sugar, rice vinegar, mirin, sesame oil, grated ginger, and minced garlic. Heat over medium heat until the sugar is dissolved. Add the cornstarch-water mixture and stir until the sauce thickens. Remove from heat and set aside.

        Fry the Tofu: Heat about ½ inch of oil in a large frying pan over medium-high heat. Once hot, add the coated tofu nuggets in batches, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove the nuggets and drain them on a paper towel.

          Glaze the Nuggets: Once all the nuggets are fried, return them to the pan while it’s still warm. Pour the teriyaki sauce over the nuggets and gently toss until they are evenly coated. Cook for an additional 1-2 minutes to allow the sauce to adhere.

            Serve and Enjoy: Transfer the crispy tofu teriyaki nuggets to a serving platter. Optionally, garnish with sesame seeds and chopped green onions. Serve hot with steamed rice or alongside fresh vegetables.
