Crispy Teriyaki Tofu Cubes

1 block (14 oz) extra-firm tofu

1/4 cup soy sauce

1/4 cup mirin (sweet rice wine)

2 tablespoons brown sugar

1 tablespoon rice vinegar

1 tablespoon cornstarch

1/2 teaspoon garlic powder

1/2 teaspoon ginger powder

2 tablespoons sesame oil (for frying)

Green onions (for garnish)

Sesame seeds (for garnish)

Instructions
 

Press the Tofu: Remove the tofu from its packaging and drain off any excess water. Wrap it in a clean kitchen towel or paper towels and place a heavy object on top for about 15-20 minutes to press out additional moisture. This step is crucial for achieving a crispy texture.

    Prepare the Marinade: In a bowl, whisk together soy sauce, mirin, brown sugar, rice vinegar, garlic powder, and ginger powder until the sugar is fully dissolved.

      Marinate the Tofu: Once the tofu is pressed, cut it into 1-inch cubes. Place the tofu cubes in the marinade and let them soak for at least 30 minutes, turning them occasionally to ensure all sides are coated. For extra flavor, you can marinate for up to 2 hours in the refrigerator.

        Coat with Cornstarch: After marinating, remove tofu cubes from the marinade (reserving the marinade) and pat them dry gently. In a separate bowl, combine the cornstarch with a pinch of salt and pepper. Toss the tofu cubes in the cornstarch mixture until they are evenly coated.

          Heat the Oil: In a large non-stick skillet or frying pan, heat the sesame oil over medium-high heat until shimmering.

            Fry the Tofu: Gently add the cornstarch-coated tofu cubes to the hot oil in a single layer (you may need to do this in batches). Fry for about 6-8 minutes, turning occasionally, until all sides are golden brown and crispy. Remove the tofu cubes from the pan and set them aside on a plate lined with paper towels to absorb excess oil.

              Glaze the Tofu: In the same pan, pour in the reserved marinade and bring it to a simmer. Let it cook for 2-3 minutes until slightly thickened. Gently add the crispy tofu cubes back into the pan and toss to coat them in the glaze. Cook for another minute until the tofu is heated through.

                Serve: Remove from heat and garnish with sliced green onions and sesame seeds. Serve hot over steamed rice or alongside stir-fried vegetables for a delightful meal!
